The Tabordet estate was created by Raymond Tabordet in the 1960s, in the village of Verdigny, when he purchased 4.5 ha of vines in the Sancerre appellation. Manual or mechanical harvesting is performed depending on the cuvée, vinification doesn’t use sulphur, enzymes or other products. Fermentation relies on indigenous yeasts that are unique to each terroir.
